Regular chips and dips are SO last year! Kick Game Day snacks up a notch with these nutrient-packed Vegetable Fritters, made with Mother Raw Balsamic Vinaigrette & Marinade and dunked in the delectable Mother Raw Spinach Dip!
Combine shredded carrots and zucchini with green onion, parsley, Mother Raw Balsamic Vinaigrette & Marinade, water and salt in a large bowl. Let sit for 10 minutes.
Add flour and stir to create a thick batter.
Heat a large skillet over medium heat. Lightly coat with oil. Working in batches, drop batter by the 1/3 cup full in the pan, leaving space between each. Use the bottom of the measuring cup to spread batter to ½-inch thick.
Cook until golden and crisp, 5 to 6 minutes per side. Remove cooked fritters to a paper towel lined dish to drain excess oil.
Serve alongside Mother Raw Spinach dip.
