Fresh, flavourful and full of crunchy goodness, this Italian pasta salad is a simple and delicious mix of veggies and our dreamy Mother Raw Italian Dressing & Marinade. Warning; bright colours of yellow pepper, broccoli and cherry tomatoes may make your lunch mates a tad jealous. This delicious recipe was created by @figgindelicious and it’s figgin’ tasty.
- 2 cups uncooked fusilli pasta
- 2 carrots, chopped
- 1 red onion, diced
- 1⁄2 head of broccoli, chopped
- 1 yellow pepper, chopped
- Handful of cherry tomatoes, halved
- 1 cucumber, diced
- Handful of black olives
- Mother Raw Italian Dressing & Marinade to taste
Bring a big pot of water to a boil. Meanwhile, prepare all vegetables and combine into a large bowl.
Cook the fusilli pasta until al dente, drain and add to bowl of prepared vegetables. Stir in all the dressing you can handle.
