Balsamic Dressing
Ingredients
1¼ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup unsweetened dairy-free milk

4 tbsp Mother Raw Balsamic Vinaigrette & Marinade
- 2 tbsp water
- ½ cup baby spinach, roughly chopped
- ⅓ cup sundried tomatoes, chopped
- ¼ cup orange bell pepper, diced

Directions
Preheat the oven to 375F. Lightly grease a mini muffin tin or line with mini muffin cups.
Stir flour with baking powder, baking soda and salt in a large bowl.
Whisk in milk, Mother Raw Balsamic Vinaigrette & Marinade, and water until no lumps remain. Do not overmix.
Fold in spinach, sun dried tomatoes and peppers.
Spoon mixture into prepared muffin tin and bake until a tester inserted into the middle comes out clean, about 15 minutes.
