What’s better then a quesadilla? A QUESO-dilla! That’s right, we used Mother Raw Vegan Queso to create an epic QUESO-dilla recipe, full of cheesy goodness and loaded with veggies. If you want some extra heat, use Mother Raw Spicy Queso instead. This drool worthy recipe is sure to fulfill your cravings.


  • 2 tortillas (any kind of tortilla, we recommend silver hills organic whole grain or spinach tortillas)
  • 1 tbsp oil of choice
  • 1-2 button mushrooms
  • 2-3 tbsp chopped bell pepper
  • 2 tbsp chopped onion
  • 1 jalapeno
  • Optional: black beans, corn, zucchini, meatless crumbles
  • Mother Raw Queso or Mother Raw Spicy Queso


Queso can get a bit messy! It doesn’t act like traditional cheese, so follow the steps below in order to create the perfect QUESO-dilla!

Heat your pan with your oil of choice. Next, generously slather both of your tortilla’s with Mother Raw Queso and set one tortilla aside. Place one of your tortillas flat onto a heated pan, with the queso facing up. Sprinkle all of your veggies on the tortilla evenly so that it looks like a pizza. Once your tortilla is starting to brown on the bottom, slide it off your pan and onto a plate. Now repeat with your next tortilla, but without the veggies. When this tortilla is brown on the bottom, slide it off the pan and on top of your other tortilla so the two queso sides are together. Cut into 4 or more slices and voilà, a QUESO-dilla. Dip in Mother Raw Ketchup or Mother Raw BBQ sauce for an extra kick of flavor!
