2 sweet potatoes, peeled and cut in to 1-in cubes.
2 cups Brussel sprouts, trimmed and halved.
4 tbsp olive oil.
1½ tsp salt.
½ tsp black pepper.
3 cups cooked rice (leftover rice works perfectly!)
540 ml can of lentils, drained and rinsed.
2 cups kale, stripped from stem and thinly sliced.
⅓ cup Mother Raw Caesar Dressing & Marinade, for serving.
½ cup pumpkin seeds, hulled, roasted, and salted.

A hearty combination of some of our favourite fall produce; sweet potatoes, Brussels sprouts, kale and lentils smothered in our delectable Mother Raw Caesar Dressing & Marinade. Bonus points for using leftover rice to make this bowl even easier to assemble on busy weeknights!
Preheat the oven to 450°F. Line a baking sheet with parchment and set aside.
Place sweet potatoes and Brussels sprouts on a prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Stir to coat and spread out on the sheet. Place in the oven and roast until fork tender and lightly golden, 20 to 25 minutes, flipping halfway through.
To assemble salad, place rice in a large serving bowl and top with roasted potatoes and sprouts. Top with lentils and kale.
Douse with Mother Raw Caesar Dressing & Marinade over top and toss to incorporate.
Sprinkle with pumpkin seeds.
