Ingredients:

  • 2 large firm avocados
  • 1 cup gluten free breadcrumbs
  • 2 flax eggs (combine 2 tbsp flaxseeds + 6 tbsp water)
  • 2/3 cup almond flour (or any flour of your choice!)
  • 1/4 tsp smoked paprika
  • 1/4 tsp parsley flakes
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Mother Raw Ranch Dressing & Marinade or Mother Raw Ranch Dip

Method:

Create flax egg and set aside in a small bowl. Set aside almond flour in a separate small bowl. In a third bowl, add breadcrumbs + all of the seasoning. Next, cut the avocado into wedges. First dip the avocado into the almond flour, then the flax egg, then breadcrumbs, repeat with each individual avocado wedge.

Lay wedges on a parchment paper lined baking dish, bake at 425°F for about 20 minutes, flipping half way. Enjoy warm and dunk into Mother Raw dressing or dip!
