Scrambled Tofu Sandwich with Smoky Red Onion Bacon

Looking for a great alternative to your favourite egg sandwich? Try out this scrambled tofu sandwich recipe complimented with savoury red onion bacon and Mother Raw BBQ Sauce!

Ingredients

For the Red Onion Bacon:
1 large Red Onion, peeled, sliced through the belly, in rings
1 tsp Tamari
½ tsp Garlic Powder
1 Tbsp Extra Virgin Olive Oil
½ tsp Liquid Smoke (optional)
Pinch of Salt
 
For the Tofu:
1 Tbsp Extra Virgin Olive Oil
1 15oz package Tofu (extra firm, drained, crumbled with your hands)
1 Tbsp Nutritional Yeast
⅛ tsp Turmeric Powder
⅛ tsp Garlic Powder
2 Tbsp Mother Raw Queso
2 Tbsp Water
½ tsp Black Salt (kala namak)
 
For the Sandwich:
8 slices Bread, toasted
1 Avocado, sliced thin
⅓ cup Mother Raw BBQ Sauce
 

Method

  1. Preheat the oven to 350ºF. Place onion rings on baking sheet and season with all Red Onion Bacon ingredients. Rub in seasoning well with hands. Place in the oven and bake for 20 to 24 minutes, flipping half way through, until onion is browned and very tender. Remove and set aside.
  2. Meanwhile, heat a skillet over medium heat and add the extra virgin olive oil along with the crumbled tofu, nutritional yeast, turmeric and garlic. Sauté for 2 to 3 minutes, then add the queso and water and cook for an additional 5 to 7 minutes. Season with the black salt and set aside.
  3. Slather the BBQ sauce on each slice of bread, add the red onion bacon, tofu and avocado slices and top with the other slice of bread. Cut in half, serve and enjoy!
