Recipe Italian Smashed Chickpea Toast

Another great way to dress up your toast, try out this Italian Smashed Chickpea recipe featuring Mother Raw Italian Dressing!

Ingredients

1 15 oz can Chickpeas, drained and rinsed
½ Red Onion, small, finely chopped
1 clove Garlic, minced
¼ cup Mother Raw Italian Dressing
¼ cup Parsley, chopped
⅓ cup Kalamata Olives, chopped
½ tsp Oregano, dried
¼ tsp Kosher Salt
Chili Flakes, to taste (optional)
4 slices Sourdough, toasted
1 tsp Nutritional Yeast (for topping, optional)
Flaky Salt (for topping, optional)
 

Method

  1. In a large bowl, add the chickpeas and mash with a fork, or potato masher, until most of the chickpeas are smashed, leaving some whole.
  2. Add the remaining ingredients, except for the bread and mix well to combine.
  3. Divide the chickpea mixture onto the sourdough and top with nutritional yeast and flaky salt. Serve and enjoy!
