Creamy Japanese Coleslaw with Nori

Not your traditional coleslaw! This is a fun take on the traditional picnic favourite, featuring Mother Raw Japanese Dressing

Ingredients

½ cup Cashews, raw
¼ cup Mother Raw Japanese Dressing
½ Lime, juiced
3 ½ tbsp Water, as needed to thin
1 small head Savoy Cabbage, sliced thin
2 Carrots, sliced thin
½ large Cucumber, sliced thin
3 Radishes, sliced thin
8 Nori Sheets (snack size, torn into pieces)
 

Method

  1. In a bowl, add the cashews and cover with hot/just boiled water. Let them soak for at least 30 minutes.
  2. Once soaked, drain and rinse. Then add to a high powered blender along with the Mother Raw Japanese dressing, lime juice and water. Blend on high until smooth and creamy.
  3. In a large bowl, add the cabbage, carrots, cucumber and radish. Add the dressing and toss until well combined and creamy. Before serving, top with sliced (or crushed) nori leaves on top. Enjoy!
