Recipe Chili "Cheese" Fries

We want to share how to make the ultimate plant-based chili "cheese" fries from the comfort of your own home! We used sweet potato and carrots to make our fries, but you can use any root veggie or potato you have on hand. Dip freely with Mother Raw Spicy Queso! 

Ingredients: 

  • 1 Medium Sweet Potato, peeled and chopped into fries
  • 2- 3 Large Carrots, peeled and chopped into fries
  • Avocado Oil Spray
  • Paprika, Sea Salt to Taste
  • 1/4 C Vegetarian Chili (Store bought or homemade)
  • ¼ C Mother Raw Spicy Vegan Queso
  • 2 Tbsp Green Onions
  • Chili Flakes to taste

Method: 

Set oven to 425.

Prepare the vegetables. Wash and peel sweet potato and carrots. Slice into long, narrow “fries”.

Line a cookie sheet with parchment paper and spray with avocado oil spray. Line the chopped carrot / sweet potato fries evenly with space between. Spray with avocado oil and season generously with sea salt and paprika. Roast in the oven for 25 minutes. 

While carrots and sweet potatoes are roasting, chop the scallions and set aside. 

When potatoes / carrot fries are crispy, place on a microwave safe plate. Top generously with your favorite vegan chili (or bean mixture). Microwave for 30 seconds to heat the chili. Serve with Mother Raw Queso on the side and sprinkle with green onions. Enjoy!
