Save your broccoli stem and toss them in your
next breakfast hash! Feel free to use what you have on hand with this recipe,
such as leftover boiled potatoes, green onion stems, onions or peppers.
Heat a skillet over medium heat and add a splash of olive oil. Once hot add the onion and sauté for one to two minutes, until just starting to soften. Then add the potatoes and cook until slightly softened and starting to brown, stirring occasionally, about 15 to 20 minutes.
Add the broccoli stem and cook for 5 minutes until just tender. Add the black beans and green onions and stir everything together. Season with salt and pepper.
