This kale and farro salad is fresh, full of delicious, nutritious greens, grains and greens nuts. It is easy to rustle up and great to make-ahead.
1 head lacinato kale, finely chopped into ribbons
⅓ cup Mother Raw Maple Fig Dressing
1 shallot, sliced thin (or ½ red onion)
¾ cup cooked farro
½ cup pecans, roughly chopped
1 apple, sliced thin
Add the sliced kale to a salad bowl along with the Mother Raw dressing and massage using your hands until the kale is soft.
Add the shallot, farro and pecans and toss well.
Divide onto plates and top with sliced apple.
