Potatoes and leeks are a match made in heaven and taste even better when grilled. Prep this salad by boiling your potatoes ahead of time until just fork tender. 1 lb fingerling potatoes, halved lengthwise
2 leeks, tender green and white parts sliced in half down the middle
1 ½ tbsp extra virgin olive oil
Salt and pepper, to taste
Fresh chives, for garnish
- Bring a large pot of salted water to a boil. Once boiling, add the potatoes and cook until just fork tender, about seven to eight minutes. Then remove and drain and place them in a large bowl.
- Add the sliced leeks to the bowl with the potatoes and toss with the olive oil, salt and pepper.
- Heat your grill to high.
- Place the potatoes and leeks sliced side down on the grill and cook for six to eight minutes, until grill marks form and both are cooked through. Remove and set aside.
- Dollop the Mother Raw Everything Bagel Dip on a platter and top with potatoes and leeks. Top with chives and season to taste with salt and pepper.
